 Teacher Appreciation Luncheon  


This past Spring, in appreciation for all our teachers do for our kids every day, the PTO sponsored a Teacher Appreciation Luncheon at our school.

Several teachers commented on the delicious salads and asked for the recipes, so here they are!  We hope you enjoy making these salads, and eat them in good health!!

 

Grand Fruit Salad

2 cups green grapes 2 cups sliced strawberries
2 cups sliced peaches 1 cup sliced orange segments
1 cup sliced kiwi 1/2 cup orange flavoring
1/2 cup orange juice 2 T sugar

Combine all ingredients in a large bowl. 
Cover and refrigerate up to 8 hours.  Serves 8.

 

Roast Beef Salad

2 cups (3/4 lb.) roast beef, thinly sliced 1/2 cup celery, finely sliced
1/3 cup sour dill pickles 1/4 cup small capers
1/4 cup chopped green onions  
   
Dressing:  
1/4 cup salad oil 1 clove garlic, pressed
3 T apple cider vinegar 1 T dijon mustard
Tabasco, salt & pepper to taste  

Mix dressing well and pour over ingredients; toss well.
Serve at room temperature or well chilled.  Holds well overnight.

 

Chicken Salad

3 cups cooked chicken breast, diced 1/2 cup pecans, sliced
1 cup red grapes, sliced in half 8 slices cooked bacon, crumbled
1 cup celery, sliced 1/2 cup green onion, diced
   
Dressing:  
3/4 cup mayonnaise 2 T honey
1/4 cup dijon mustard 2 T tarragon
Onion salt, celery salt, garlic salt to taste.
   

Mix dressing well and pour over ingredients; toss well.
Serve well chilled; serves 6.

 

Potato Salad

5 lbs. new potatoes, boiled & cut up 12 - 18 hard boiled eggs, chopped
1 bunch green onions, chopped 2 cans black olives, sliced
1/2 cup green olives, sliced  
   
Dressing:  
1/2 T mustard seeds 3 T balsamic vinegar
1-1/2 cups mayonnaise 3 garlic cloves, pressed
garlic salt to taste seasoned salt to taste

Soak mustard seeds in balsamic vinegar for 30 minutes. 
Mix mayonnaise with spices and then stir in the vinegar/mustard seed mix. 
Pour over salad.  Salad sets up well overnight to blend flavors.  Serves 10-12.
